One of the best restaurants in the Grenoble area, this is the reputation of this restaurant, which has just been awarded the adjective “remarkable”. The room is classic, huge, triple, but never in its little shoes… There are the portraits of ancestors, candelabras, a gigantic tapestry, and a demanding light. The castle is not only decoration. The candles dance, the tables welcome, and the atmosphere is immediately refined and controlled.

Chef Rui Rouxinol’s menu is also welcoming, curious and generous. And the dishes, deeply delicious. Stir-fried deer with cranberries, Saddle of rabbit stuffed in green mousseline, Cod fillet with Jerusalem artichoke and parsnip cream, stop there! Choose without hesitation the smoked foie gras, crumbled sesame nougatine, jurançon granita. The plate arrives under a bell, the smoke exhales and smells of the divine, and this entry really stirs, under its thin slices of hot brioche. The granita should be consumed slowly between each bite of this exceptional foie gras, like a sip of Jurançon. For red meat lovers, the Beef tenderloin is exquisitely tender.

The cheese platter is also worth a visit. It is an exclusively Rhône-Alpes-Auvergne plateau: Tome de chèvre, reblochon, Persillé de Tignes, Tour du Bonheur, Rigotte de Condrieu …

In wine, we find original treasures, like this Domaine Viret – dolia Syrah, a natural red wine, without sulphite, aged underground in an amphora… The sommelier transforms the art of sommellerie in the blink of an eye, and never into a lesson. stilted. He sticks you a port with the cheese board and it’s sublime! A specialist in food and wine pairing, he is curious to watch in his approach dance. Like a wizard, who seems to know when the customer comes through the door which wine he already has in mind for him. It is said that in 1259, this castle of Eybens welcomed lepers… Eight centuries later, this former hostellerie des Templiers is a hotel located in the heart of the village of Eybens. It touches the emotion with its ancient allure. Thick stone walls, pierced with small windows, await you to offer you the protection due to distinguished guests. The centuries have passed, they are still there, and this since the 13th century, to talk to you about history and authenticity. The sobriety of the place invites serenity. No frills come to disperse your thoughts, the lines are straight, pure, the quadrangular towers punctuate this wise geometry. The time to rest has come, it is here and now … In the entrance, two lounges, one in winter with its duck blue tones and its fireplace, and the other in summer, absolutely lovely with its armchairs Louis XVI and his black and white chessboard on the ground which also promises a very beautiful atmosphere, in fine weather, when the French windows open onto the garden … Near the fireplace, a slight smell of coniferous trees, and then in the corridors, an essential oil scent… It smells really good here!

The rooms: 8/10

The term French elegance is used so much that we sometimes wonder if it has become a dressing on disuse or out of date. Phew, here it is not. This term takes on the connotation of a soul. The soul of the 42 classic-style rooms. They are simple, comfortable, and extremely well-kept. The one I occupy, in shades of beige and burgundy, with its hunting curtains and bird prints, overlooks a terrace. How about having an aperitif right there? The parquet is beautiful, the bed is comfortable, the large desk is flat, period, but furnished with numerous sockets. Mini-bar, courtesy tray very nicely chosen, with kettle and detox herbal teas… The bathroom is functional, the taps are impeccable. It would take a little for these rooms to gain momentum. But even so, with a few flaws in the details that break chic or reject opulence, we like the way they are: soft, clean, and welcoming.

Fitness and spa

A fitness room is available to guests, as well as a whirlpool, a hammam and a sauna, as a sort of mineral and peaceful stopover.

Massages are possible on request, and performed by external service providers.

A swimming pool is heated in the garden from May to October.
